Easy, Good-for-You Shrimp & Grits
  1. Grits – Empty 12 oz bag of frozen cauliflower into blender or food processor. You’ll want the cauliflower to have a rice or grit-like consistency. Sauté cauliflower in 2 tsbp of olive oil. Stir in 1 tsp of Cajun seasoning. Add 1/2 cup reduced fat cheese and 1/4 cup milk. Stir and reduce heat.
  2. Shrimp- Sauté minched garlic in 1 tbsp olive oil. Add green onion and smoked paprika. Add shrimp then cook until pink.
